Baked Potato Soup

Baked Potato Soup

2/3 c. Butter or Margarine
2/3 c. All-Purpose Flour
7 c. Milk
4 Large Baking Potatoes, baked, cooled, peeled, and cubed (about 4 cups)
4 Green Onions, sliced (or 1 Medium onion, chopped)
12 Bacon Strips, cooked and crumbled
1 ¼ c. Shredded Cheddar Cheese
1 c. (8o.z.) Sour Cream
¾ Teaspoon Salt
½ Teaspoon Pepper

In a large soup kettle or Dutch oven melt the butter. Stir in flour; heat and stir until smooth. Gradually add milk, stirring constantly, until thickened. Add potatoes and onions; bring to a boil, stirring constantly. Reduce heat; simmer for 10 minutes. Add remaining ingredients; stir until cheese is melted. Serve immediately. Yield 8 to 10 servings (2 ½ quarts). (I used more potatoes, and added enough extra milk to make like we like it). I also used a pound of bacon, took the extra and crumbled it up and put a little of that and a little of the cheese on top of each bowl as we served it.

This soup is so yummy I think I could eat it every day (for at least a week...LOL).

Homecoming Weekend

Here is a picture of *T* and I (taken by my friend Leah) in the Homecoming Parade. He always wants me to ride with him in the truck, but then I always miss all the floats... so I have no other pics at this time, I'll have to snag some from some friends of mine.

Wildlife at my door

This is what I found outside my front door when I woke up on Sunday (I keep forgetting to post about it). There has been a few of these guys alone the road all week. We think they were just released as they are not afraid of anything and they have just suddenly appeared.

Wow! It's been four years since I started this blog. One of these days I'll have to print off what I've written here since I no long seem to write in a journal.

I am so glad my family are pack rats!!!!

Look what I dug out of one of the sheds over at Mom's. It has been in there for at least 10 to 12 years that I know of, no one seems to know where it came from or when. We think it may have come from one of my Dad's auction finds, but we aren't sure. When I found it, it was really dirty and dusty, but now that I've cleaned it up some I think I can repaint it and make a liner and possibly a skirt for it.
